On Christmas Eve my husband and I put down our little one, and cooked together! Prior to Little B, we did this all the time. Post Little B, we’re lucky to cook a real meal (one consisting of more than 4 ingredients) once a month. We wanted something with distinct flavors, somewhat healthy, and quick, so we cracked open our collection of recipes and made this, Lime and Honey Glazed Salmon.

Preheat the oven to 450 degrees. That would be Fahrenheit.

Mix together? lime juice, lime zest, cilantro and soy sauce in a bowl – save for later.

Heat up the oil in a large ovenproof skillet (that has a lid) over medium – medium-high heat.

Add the shallots and saute them until they begin to soften and brown up a little. Don’t fry them to a crisp. Been there, done that and its not good.

Dump the rice into the skillet and toast for 20 seconds or so, stirring constantly.

Pour in 3 1/4 cups of the chicken broth and bring it to a boil.

Turn off the stove (you’re done with it) and put the lid on the skillet and pop it in the oven. Make sure you adjusted your oven racks before you try to stick this in the oven. Less yelling this way.

Bake it for 10 minutes and remove from the oven. The rice should be cooked and the majority of the broth absorbed. You don’t want it to be dry so add the leftover broth if you need it.

Sprinkle some salt on that rice! Well, sprinkle if you don’t have issue with high blood pressure.

Sprinkle some salt and pepper on the salmon (again refer to the bullet above) and put the salmon on the rice, gently pressing in it. Arrange the broccolini that you’ve washed and cut up around the salmon.

- Drizzle 1 tablespoon of the of the soy-lime mixture over each fillet.

Put the lid back on the skillet, return it to the over and bake it for 8-10 minutes, until the salmon is flakey and the broccolini is tender-crisp.

Remove it from the oven and drizzle the rest of the soy-lime mixture over the salmon & rice. Sprinkle with additional cilantro if you want (makes for a better presentation).

Look over your shoulder to make sure no one is watching and take a test bite of the rice. After all, good cooks taste their food before serving!
This should serve 4 but in my family it serves 2.5 (we like salmon).
