Last week I intentionally did not create a menu plan. I left my family (yes, everyone survived, even the dogs) and went to Iowa to spend some time with my parents and brothers. My husband’s cooking abilities are limited to throwing some meat on the grill and baking some asparagus in the oven so I bought simple things that he could make for himself and our daughter. Have I mentioned her fascination with Suddenly Salad? That kid LOVES the stuff. I think she would eat it over chicken tenders any day.

I also knew that I was going to eat at all the restaurants from my childhood: Taco John’s, Giovanni’s and a new one Okoboji Grill. I tried to make smart food decisions but let’s face it, there is nothing smart about Mexican fast food. It’s greasy, lardy and good. To make up for it I went to Trader Joe’s and stocked up on all kinds of healthy food.

That’s what we’re having for dinner this week. I need to get back into mommy mode and start cooking for my family again before my daughter gets used to pasta salad and boxed macaroni and cheese!

well, we are making nachos (hopefully healthy ones lol) later this week, probably Thursday. On the menu today is a quick take and bake pizza from the local store after I get done grocery shopping. Tomorrow, I am thinking some sort of casserole. Man, does that taco pizza look yummy, hope you enjoyed it!
