Life is back to normal. No traveling, no visitors and no excuses! Time to get back on track with Menu Plan Monday. It’s been absent from the blog for a few weeks so instead of telling my husband to “check the blog” when he asked me what’s for dinner, I had to actually tell him. This week we’re going heavy on the burgers. They’re cheap, easy to make and they fill me up. Who cares that I’m making most of them without beef!
Monday
Tuna Burgers with chipotle mayo and whole wheat pasta salad. I have to tell you my kids (yes, plural because my step-son likes it too) love my super simple pasta salad. They don’t even care that the pasta is whole wheat and actually, I’m not quite sure they realize it… So please, don’t tell them!

Tuesday
Mexican Manicotti because I finally found the shells at my grocery store! Now if I can just find jumbo shells, I’ll be in business.
Wednesday
Turkey burgers with a twist. I’m going to hide onions, peppers and mushrooms in them with just a little bit of swiss cheese. I hope these are photograph worthy so I can share the recipe with you because they are sooo good.
Thursday
Pita Bread Salad with Cranberries, Spinach & Chicken. Every week I buy a huge container of organic spinach. Usually I saute some for breakfast and eat with my eggs. Someday I’ll get the nerve to try it in a smoothie. Speaking of smoothies, I’ll be sharing a Spiced Apple Pie smoothie recipe as my entry in this month’s Crazy Cooking Challenge.
Friday
Pan-Seared Chicken Breasts with Shallots, that is if I don’t drink all the white wine before then. Hiccup.
Saturday
Hamburgers and grilled corn on the cob. If that doesn’t scream summer, I don’t know what does.
Sunday
Free for all!
I’ve also decided that my husband is going to start cooking once a week. He needs to learn how to cook on more than a grill because if I die, I don’t want my daughter eating flank steak every night. Sounds good, I have to sneak whole pasta by my family too, but my husband is the one who really objects, not the kids!

Kudos to you for making healthy stuff that your family will eat!! Mine would leave the house immediately if I told them we were having tuna burgers.
For your hubby—bbq chicken is the easiest ever. Put boneless/skinless chicken breasts in a casserole dish. Pour a can of Coke over it, then a bottle of bbq sauce. Cover with foil and bake for at least an hour at 375. It’s always perfect and delicious!!
