My brother came to stay with us for the week so I decided to make a cake using Nectresse as my sugar substitute to see if he noticed the difference. I have a pumpkin cake recipe that I make every fall. It’s delicious, moist and so full of calories and sugar. In the past I’ve decreased the fat by using applesauce instead of oil, but I had never tried a sugar substitute before. I’m happy to report that neither my brother or anyone else the family noticed the difference! Pumpkin Cake
Ingredients
- 4 eggs, beaten
- 1 cup applesauce
- 16 packets of Nectresse
- 2 cups sifted flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 can pumpkin
- 1 tsp vanilla
Directions
- Mix and cream together eggs, applesauce and Nectresse.
- Add flour, baking soda and cinnamon, Mix well.
- Lastly add pumpkin and vanilla.
- Bake in a 9×13 cake pan for 30-35 minutes or until done.
- Frost with your favorite cream cheese or vanilla frosting.

We tried this since we have a diabetic over here. It’s not bad at all!! A bit sweet so we use less which is great!! Oh….. and I’m taking that recipe too!!

Like the idea of using an alternative to sugar. I keep trying to reduce the amount of sugar in our family’s diet. I hate the idea that the kids are sugar dependent.

I tried Nectresse in my tea but couldn’t get past the flavor difference… haven’t tried it in baking though… might be better when mixed in a recipe!
