Peanut Butter Toffee Turtle Cookies

Next week begins a series of cookie exchanges as Christmas quickly approaches.  Each year, I try out a few new recipes, only to revert back to my old standbys. This year I was pleasantly surprised to find a new cookie to add to my arsenal. My new favorite Christmas Cookie are these Peanut Butter Toffee Turtle Cookies.

First, let me tell you my history with cookies the requirements that I have.  I love the classic chocolate chip cookie.  My all time favorite chain cookie store is Blue Chip Cookies and I expect all cookies to be like theirs: thick, soft and so delicious.  So, as you can tell, my standards are pretty high (pun intended).  I’ve tried several chocolate chip cookie recipes and they all come out the same.  As flat as pancakes.  I’ve tried recipes that require room temperature butter, melted butter, margarine, butter-flavored Crisco and each time, I have chocolate chip frisbees.  So I had pretty much given up on any recipe that even sounded like a chocolate chip cookie until I found this one:

Peanut Butter Toffee Turtle Cookie

These cookies are so good and they stay nice and thick.  Because you have to flatten the dough, you can make them as thick as you want.  I did make a couple of modifications to the recipe.  Instead of Bisquick (because I didn’t have any) I made a Bisquick substitute (recipe below).  I also used pecans instead of peanuts and upped the amount of vanilla to one teaspoon. My peanut butter toffee turtle cookies are so amazing.

Now instead of giving out buckeyes or cookie bars, I have a cookie that is tough enough to withstand travel and thick even to satisfy me.  Yum, they are so good I’m off to the kitchen to have another!

Bisquick Substitute
  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp Crisco
Whisk the dry ingredients together then using a pastry blender (or two knives – works but takes longer) cut in the Crisco.  Equals one cup of Bisquick.?

    Wow Sarah, these cookies looks fab. The gooey caramel turtle-y centre does it for me. Now I’m wishing I was lucky enough to be on your cookie exchange list :) ! Also, thanks for the Bisquick substitute. I’ve been curious to know how to make the mix at home.
