I love getting snail mail.  There is something to be said about getting an unexpected card or letter in the mail.  To my surprise and delight, today when I opened the mailbox I had a box from Country Bob’s.

I had no idea what is was but knew due to the shape and size, it wasn’t a bottle of sauce.  After shaking it (yes, I always shake packages that I receive and I’m not sure why, habit I guess), I realized it must be a book of some sort and it was: Country Bob’s Cookbook.

First of all I want to tell you, Country Bob’s did not ask me to say a word about their cookbook.  Sure, they probably hoped I would like it enough to mention it but by no means did they say, “hey, I’m sending you a cookbook, please tell us what you think.”  Well I will tell you what I think (to no surprise to those who know me), it is a nice cookbook.  Its hardcover so no flimsy books that get beat up with use.  The font is large enough that you can actually read it.  A plus if you’re blind as a bat like me.  Its broken down into four categories: Appetizers, Soups and Snacks, Grilling, Main Dishes and Desserts.  Now with that last category you’re probably thinking the same thing I was.  Country Bob’s in a dessert?  Don’t worry – not one dessert using seasoning salt or all purpose sauce!

I’m going to make Country Bob’s Chip Dip for my next potluck.  I didn’t see this recipe on their website so I’m sharing it with you.

Country Bob’s Chip Dip
  • 1 lb lean ground beef
  • 1 cup chopped green bell pepper
  • 1 cup chopped onion
  • salt to taste
  • 8 oz cream cheese
  • 1/2 cup Country Bob’s All Purpose Sauce
Cook the ground beef, green pepper and onion in a skillet until brown and crumbly, stirring frequently.  Drain the ground beef mixture and return to the skillet. Season with salt.  Chop the cream cheese into pieces and add to the skillet with Country Bob’s All Purpose Sauce.  Heat over low heat until the cream cheese melts, stirring frequently.  Serve hot with your favorite sturdy chips.
Yield: 4-5 cups
Enjoy!
