12 Days of Pumpkin: Day 4 Pumpkin Chocolate Chip Bread

I know, first I put chocolate chips in the pumpkin brownies, now I’m doing it to the pumpkin bread.  Don’t worry, this will be the last post for a while that includes chocolate chips and pumpkin.  Tomorrow we’re going to venture off into some breakfast dishes, followed by some savory ones!  But don’t worry, we’ll come back around to those sweet desserts everyone loves.

The first time I made Pumpkin Chocolate Chip Bread was with the intent of giving it to my neighbors for Thanksgiving.  Then I realized most of neighbors really didn’t celebrate Thanksgiving (let’s see one family was from Germany, another Canada and a couple from Great Britain) so I took it to work instead.  I believe the bread was gone in 15 minutes.  That’s what happens when you have an office full of women.  Hopefully this bread will last a little longer in your house and for safe measures, I would suggest hiding a few pieces. :)

Pumpkin Chocolate Chip Bread

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 3/4 cup canned pumpkin
  • 4-6 oz chocolate chips
  • 3/4 cup chopped walnuts
Directions:
  1. Preheat the oven to 350° F.  Spray a 9×5 loaf pan with nonstick cooking spray.
  2. In a large bowl, cream the butter and sugar until light and fluffy.  Beat in the eggs one at a time, mixing well after each one.
  3. In a medium bowl, combine the flour, baking soda and the remaining spices. Whisk to evenly distribute spices in the flour mixture.
  4. Stir the dry ingredients into the wet ingredients, alternating between the dry and the canned pumpkin, ending with the dry ingredients (I always do dry, pumpkin, dry, pumpkin, dry).
  5. Fold in the chocolate chips and 1/2 cup of the walnuts.  Spoon into your loaf pan and sprinkle the remaining walnuts on top.
  6. Bake for 60-65 minutes or until a knife inserted in the middle of the bread comes out clean.  Cool, then remove from the pan.
