Today I hosted a Halloween party for my play group. A group of about 7 moms and their kids came over to show off their costumes, eat some treats and make some crafts. Why am I telling you this? After all, this is a post about pumpkin and I’m a day late. Well, because I spent the entire night trying to figure out inexpensive alternatives because I shipped the Halloween decorations that I ordered to my previous address…in North Carolina! So, in a panic I came up with these old school decorations and Pumpkin Pancakes.
Yes, those are construction paper, paper chains. But what you really came for was the next recipe, without further stories of my failures, here you go! I found this recipe for Pumpkin Pancakes at HowTo: Simplify. If only she could have told me how to simplify my Halloween play date…
Pumpkin Pancakes
Ingredients:
- 1 1/4 cups all-purpose flour
- 2 tbsp white sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp salt
- 1/8 tsp nutmeg
- 1/8 tsp ground cloves
- 1 cup milk
- 6 tbsp canned pumpkin
- 2 tbsp butter, melted
- 1 egg
- Whisk together the flour, sugar, baking powder and spices in a medium bowl.
- Whisk together the milk, pumpkin, butter and egg in a separate bowl. Fold this mixture into the dry ingredients.
- Melt butter in a skillet over medium heat.
- Pour 1/4 cup batter for each pancake and cook approximately 3 minutes per side.
- Serve with butter and maple syrup OR my daughter’s favorite, peanut butter!
