12 Days of Pumpkin: Day 8 Pumpkin and Bean Soup

Finding savory pumpkin dishes that don’t require chopping up a whole pumpkin and roasting it can be challenging.  Mostly, what you’ll find in blogland are soup and pasta dishes. This soup can be doctored up anyway you want. I added a dollop of Karoun Labne Kefir Cheese to my soup but you could also add sour cream or a splash of heavy cream to give it an extra layer of flavor. My husband loves my turkey chili recipe but told me he liked this soup recipe even better. Maybe it’s because I told him pumpkin is high in Vitamin A and fiber, yet low in fat.  Or maybe it’s because he’s still giddy from the Ohio State win…Nonetheless, you’ve got to make this Pumpkin and Bean Soup recipe for your family, they’ll love it.

Pumpkin and Bean Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1.5 tsp ground cumin
  • 1/2 tsp curry
  • 1/8 tsp ground red pepper
  • 1 (15 ounce) canned pumpkin
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14 ounce) can whole kernel corn, drained
  • 2 cups chicken broth
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon fresh cilantro leaves, finely chopped
  • salt and pepper to taste
  • 1/4 cup fresh chopped cilantro, for garnish (optional)
  • sour cream, plain greek yogurt or splash of heavy cream (optional)
Directions:
  1. Saute pepper and onion in the olive oil until onions are translucent.  Add garlic, cumin, curry and ground red pepper.  Cook for 1-2 minutes.
  2. Add the pumpkin, corn, black beans, tomato sauce and chicken broth.  Add cilantro, salt and pepper to taste.  Bring to a boil and then reduce heat and simmer for 30 minutes.
  3. Remove from heat and top with sour cream, greek yogurt or heavy cream (if desired) and garnish with chopped cilantro.

  2. Oh this looks delicious! I am horrible in the kitchen though- like literally almost burned my house down making popcorn once….. but this looks yummy! Maybe I’ll see if the fiance will make it for me one day lol At least one of us could cook! <3
