Instead of having a groom’s cake, my then fiance (now husband) and I opted to go with Candy Buckeyes. We had a small wedding with only immediate family and close friends and felt a wedding cake plus a groom’s cake would have been overkill. And since my husband is from Ohio, it only made sense. I’m not sure exactly when friends started requested buckeyes at Christmas time but every year they are now on the baking list.
Candy Buckeyes
Ingredients:
- 1 stick unsalted butter, room temperature
- 1 lb. box powdered sugar
- 1.5 cups creamy peanut butter
- 1 tsp. vanilla
- 1 – 12 oz package of chocolate chips
- 1/2 stick parafin (if you wish to omit parafin, use candy melts instead of chocolate chips)
Directions:
- Using an electric mixer, combine butter, sugar, peanut butter and vanilla. Form into small balls.
- Melt chocolate and paraffin in a the top of a double boiler.
- Stick a toothpick in the peanut butter ball and dip into the chocolate, leaving the top part uncovered.
- Set on wax paper to allow chocolate to harden. You can speed up this process by placing them in the refrigerator.
- Carefully smooth out the toothpick hole.
Roll out all your buckeyes for quick dipping.

Some people use a small ice cream scoop so all their buckeyes are uniform in size but I prefer to eye ball it. After all, if you’ve ever seen a real buckeye, they come in all sizes and no, I’m not talking about the one’s that play for Ohio State.

I love buckeyes! At Halloween we coat the peanut butter mixture in vanilla coating and place a chocolate chip in the center with a little red gel to make eyeballs. I think having something a bit out of the ordinary at a wedding makes it memorable.

Yep, this one caught my eye because I’m from Ohio, too! I’ve been eating the cookies since I was tiny and collecting the nuts since I was old enough to stomp them open! I can’t wait to bring my daughter home to show her how to crack open those prickly green shells to find those soft, smooth, delicious smelling (but not for eating) buckeyes!

The next time I’m back in Ohio I need to stock up on Buckeyes. I refuse to pay for those darn necklaces when I know they are easy to make…lol!
