I guess I have a bad case of mommy brain because I didn’t realize until now that I never posted Menu Plan Monday for last week! Trust me, we ate and we ate well. That was evidenced by our $120 grocery bill. It may not seem like a lot to some of you but for a family of three, I think I went overboard. My biggest obstacle is finding reasonably priced organic meats and produce. There are a few things I refuse to skimp on and organic milk and chicken happen to be on the top of the list. I’ve threatened to get a cow and a couple of hens. If prices keep going up, I just may do that.
Monday – Baked Prosciutto Egg Cups
Tuesday – Whole Wheat Pita Pizzas from The Picky Eater
Wednesday – Chicken Salad served on the leftover whole wheat pitas
Thursday – Asian Lettuce Wraps

Friday – Caprese Grilled Cheese – this will also be my entry for the Crazy Cooking Challenge. Come back for my version of the recipe next Monday.
Saturday – Cinco de Mayo Fiesta! We’ll be serving guacamole, jalapeno popper dip and these un-fried, refried beans! It’s going to be appetizers and Coronas for everyone.
Sunday – Leftovers!
My goal this week is to keep my grocery bill under $100. I’ve actually clipped a few coupons and who knows? I may just use them!

I have been wanting to create some sort of weekly meal plan, just afraid I won’t stick to it.
I usually don’t make things on the day I say I’m going to because I forget to defrost something or I run out of time and need to make the quickest item but so far, we’ve pretty much stuck with it. Trust me though, there are nights that I just want to order pizza!

Really? I thought my bill was high! I used to only spend $70-80/week when I bought mainly processed, convenience foods.

My brother in law got chickens…now we have free eggs for life! Not kidding! Every week he comes back with a dozen of (green) eggs! You guys should seriously do it!
