In my life, I would estimate I’ve eaten at least 1000 peanut butter and jelly sandwiches.  I remember as a kid bypassing the butter and putting peanut butter and jelly on my toast. I’d wash it down with a glass of milk and that would be my after school snack. Now that I have a daughter who is always asking for snacks, she’s also become a fan of the peanut butter and jelly combo, only instead of sandwiches, she prefers hers in the brownie form and I can’t say that I blame her.

Brecken and I bake together frequently. She loves helping me in the kitchen and I enjoy watching her skills develop.  She’s learning the difference between the various measuring cups and even knows that we have to level our flour before we add it to our mixing bowl. One of our favorite things to make are these Peanut Butter and Jelly Bars that I found at Averie Cooks. Unlike the sandwich by the same name, these peanut butter and jelly bars aren’t as messy (nothing drips out of the bottom) and they take less than 30 minutes to make.

Brecken’s favorite part about making these bars (aside from licking the spatula) is using a chop stick to swirl the jelly into the batter. I used to think that all jellies were the same and I was completely wrong. I figure if I’m going to feed my daughter at least 1,000 peanut butter and jelly sandwiches over HER lifetime, the least I can do is read a few ingredient labels to make sure I’m giving her the best quality of food that I can afford. I recently discovered the Welch’s Natural Spreads don’t contain high fructose corn syrup, artificial colors or flavors or preservatives. I try to live by the rule of thirds: 1/3 of her food is organic fruits and vegetables, 1/3 comes from natural products and the last 1/3, well, that’s where the moderation comes into play. :)
