One Skillet Mexican Casserole

One day my life will be simple, boring and not scheduled. I’ll be able to wake up whatever time I want, do whatever I want to do and have enough time to make meals from scratch, you know, if I want to. Until the day comes that I have no responsibility I have to be a bit strategic with my schedule. In order to get my workouts in, have family time and some me time, I cook meals my family will eat that are quick and easy like my One Skillet Mexican Casserole.

Like most people, I have about 3 hours at night to get about 5 hours of “stuff” done. I’m not too proud to admit that I have to cut corners to get everything done. With my schedule, it’s not realistic for me make elaborate meals every night of the week. Instead, I tend to cook quick and easy meals and doctor them up a bit. When I say quick and easy, I really mean it. From start to finish this meal took me about 35 minutes to make, and that includes clean up.

You can add whatever extra items you want to your Hamburger Helper Cheesy Enchilada meal. I believe all Mexican meals should include black beans and corn, so I added them. I’m the only one in my family that likes tomatoes so instead of adding an entire can, I only added half the can. Sometimes I’m nice like that.

Not only is this meal easy to make, it’s pretty affordable too! Right now Hamburger Helper mixes are on sale at my local Dillon’s AND to make life even a bit sweeter, there is a ground beef rebate floating around the web. All you have to do is buy 3 boxes and you can request your rebate. It’s easy to do (I did it and I’m not a couponer) and gives you an excuse to buy the leaner ground beef.

This mexican casserole is quick and easy.
Ingredients
  • 1 lb ground beef
  • 1 box Cheesy Enchilada Hamburger Helper
  • 1 can black beans, rinsed and drained
  • ½ cup frozen corn
  • ½ can petite diced tomatoes, drained
  • chopped parsley to garnish
  • jalapenos (optional)
Instructions
  1. Brown hamburger in a skillet and prepare Hamburger Helper according to package instructions.
  2. Mix in black beans, corn and diced tomatoes. Heat through.
  3. Garnish with diced jalapenos and parsley if desired
