Food For Thought Friday – Blue Cheese

Fifteen years ago if you would have told me I would be a fan of blue cheese, I would have told said you need medicated.  Blue cheese stunk, I wasn’t a fan of the crumbly texture and it was expensive.  As a broke college student the only type of cheese I was buying came in slices and was pre-wrapped.
 

 
Then something happened, I went on a date.  On that date I had my first steak with blue cheese butter and I became the biggest fan of blue cheese you could find.
 
And coincidentally enough, one of the BEST blue cheese makers out there is in MY HOME TOWN!   
 

They’ve been making Maytag Blue Cheese since 1941 in Newton, IA using a process developed by Iowa State University and to this day, still use that same process.  If you’re a steak fan and haven’t tried one with blue cheese butter, what are you waiting for? 
Blue Cheese Butter
  • 1 stick unsalted butter, softened
  • ?1/4 cup Maytag Blue Cheese (or if you can’t find it, another high quality blue cheese will work)
  • 1 tbsp fresh chopped parsley (you can omit if you’re not a fan)
  • Wax paper
  1. Mix butter, blue cheese and parsley together and place onto wax paper. 
  2. Using the wax paper, mold the butter mixture to form a log.
  3. Twist the ends of the wax paper close and refrigerate under hardened.
  4. Slice of pats of the butter and let it slowly melt on your steak.  You can also use it on vegetables, toasted french baguettes, etc.
Yum, I know what I’m having for dinner tomorrow night!
