Day 9 of Being Thankful: Sun-Dried Tomatoes

sun dried tomatoes

Day 9: I am thankful for sun-dried tomatoes. They make everything taste better. Well, except maybe for chocolate. I'm not sure how chocolate covered sun dried tomatoes would taste but I'm willing to try... If you haven't had the pleasure of eating a sun-dried tomato, you are definitely missing out.  Sun-dried tomatoes are a piece of tomato sunshine that has just the right bite for those creamy pasta dishes, homemade pizzas and salads.  They are sweet and chewy and so, so good!  I usually have a … [Read more...]

Apple Cider Tea Mocktail

Apple Cider Tea_Mocktail

I know my daughter is coming down with something when she grabs her blanket and her baby and lays on my lap.  My first instinct, after giving her a big hug, was to put my hand on her head to check for a fever.  Mom's intuition was right, she felt a little hot.  She told me she was thirsty but she didn't want the usual drinks so I decided I would make her something special that the entire family could enjoy, an apple cider tea mocktail.   I've been working a lot lately so I didn't … [Read more...]

Complete Dinners from HoneyBaked

Every other year we rotate visiting our families for Thanksgiving and Christmas.  This year, we'll be at my in-laws in Ohio for Thanksgiving and in addition to the traditional Thanksgiving dinner, I know they get a ham from HoneyBaked.  Every holiday they get one and its quickly eaten up by everyone.  I'm used to HoneyBaked hams around the holidays but just recently learned they also offered complete dinners that you can pick up any day of the week, any time of the year.  Yes, you heard that … [Read more...]

Nevella To Go! #SweetnessToGo

I am a walking contradiction.  I buy organic foods yet I've been known to go through a drive thru or two (or three, but who's counting).  You'll rarely hear about me skiping dessert but I'll always pass up a drink if it is high in calories.  To me, it's all about balance. On September 23 of this year, I gave up diet pop.  As a self-proclaimed addict, my original plan was to do it just for 30 days.  30 days turned into 35 and to date, I still have not had a sip.  Now instead of diet … [Read more...]

Beer and Beef Stew

Beer & Beef Stew

Meat, veggies and potatoes and beer.  Sounds perfect on a chilly fall night, doesn't it?  At my house we generally have some type of soup, stew or chili once a week and this week, we're having a simple, but tasty beer and beef stew. I originally saw this recipe in Cooking Light and knew I had to try it.  They recommend using Belgian beer (and I do too) but I've also used some of the fun seasonal beers such as Blue Moon Pumpkin Ale.  Use whatever beer you want but just like cooking with … [Read more...]

Three Cheese Bread with Marinara Sauce

3 Cheese Bread

I have a thing for finger foods.  I like them.  A LOT.  And as long as everyone's hands are clean, I'm willing to share.  Since I've been riding the train to work and seeing all the coughing, sneezing and touching of rails, posts and everything else, I'm even more of a fanatic about hand washing.  But enough about my fear of other people's germs, you're heard to read about this awesomely easy three cheese bread with marinara sauce recipe. This recipe couldn't be easier.  I … [Read more...]

Cut Food Prep Time with Chicago Cutlery Knives {Demonstration}

Chicago Cutlery

Being an ambassador for Chicago Cutlery knives for the past six weeks has been a fun experience.  Not only have I learned about a great line of knives, I've also improved my  some of my slicing and dicing skills, cutting (pun intended) my time prepping foods in half.  Since going back to work, every minute I can save in the kitchen means more time that I can spend with my family.  I enjoy cooking for my family but I definitely don't want to be a slave in kitchen and I don't have to with Chicago … [Read more...]

Pumpkin Muffins with Cool Whip Frosting

Pumpkin Muffins

As a work-outside-the-home mom (because ALL moms work), I've learned to cherish the little things in life.  My daughter and husband waiting for me when I get off the train, my dogs greeting me with wagging tails and the ability to relax after a long week at work.  By the time Friday comes around, I'm ready for the weekend and like to start things off right celebrating every day occasions. It's been a month since I've gone back to work I've started a new tradition with my daughter. Friday … [Read more...]

Perfect Pumpkin Pancakes

Perfect Pumpkin Pancakes

Growing up, pancakes were a treat.  I remember on the weekends my mom would whip out her square griddle and make pancakes for my brothers and me. Sometimes she would get fancy and make them in the shape of the first letters in our names, sometimes they would be simple circles.  Either way, it was a treat and a breakfast food that we all loved.  Now that I have a daughter, I find myself making pancakes at least twice a month.  Typically on a Saturday I'll whip out my electric griddle and make … [Read more...]

Improve Your Knife Skills with Chicago Cutlery

Chicago Cutlery DesignPro Chef Knife

Without a doubt, one of the keys to be a successful cook in the kitchen is having the proper tools! I remember the first time I made peanut butter toffee turtle cookies.  Because I didn't have any pancake mix on hand, I decided to make a substitute recipe I found online. Well, one of the the things they recommended you do was use a pastry blender to work the shortening into the dry mix.  Not having one on hand, I decided to use two butter knives.  Let's just say it took me a LOT longer than I … [Read more...]
